INGREDIENTS
1 onion – chopped
1 green bell pepper – chopped
1 tsp garlic – minced
2½ cups vegetable broth
1 (15 oz) can stewed tomatoes
1 (15 oz) can garbanzo beans – do not drain
1 (15 oz) can red beans – do not drain
1 (15 oz) can whole kernel corn – do not drain
1 (15 oz) can vegetarian refried beans
½ tsp cumin powder

INSTRUCTIONS
Prep ingredients: Chop the onion and green pepper. Mince the garlic (if not pre-minced).
Combine and cook: Add all ingredients to a large pot or 12-inch Dutch oven. Stir to mix. Cook over medium heat for about 30 minutes, or until the onions and peppers are tender. Stirring occasionally.
Dutch Oven Cooking Tips
Use 16 coals arranged around the edge of the lid
Use 8 coals in a checkerboard pattern under the bottom
Rotate lid and oven occasionally for even heat
