INGREDIENTS


  • 3 ½ lbs ground beef (80/20)

  • 3 packages of corn or flour tortillas


Seasoning:

  • 1 large yellow onion, diced

  • 5 cloves garlic, finely minced

  • 2 ½ tablespoons chili powder

  • 1 ¼ tablespoons cumin

  • 1 ¼ teaspoons smoked paprika

  • 1 ¼ teaspoons oregano

  • 1 ¼ teaspoons salt

  • ¾ teaspoon black pepper

  • ¾ teaspoon cayenne pepper (adjust to taste)

  • ¾ cup water


Toppings:

  • 2 cups shredded cheddar cheese

  • 1 small head of iceberg or romaine lettuce, shredded

  • 3 medium tomatoes, diced

  • 1 medium white onion, diced

  • 1 ½ cups sour cream

  • 1 ½ cups salsa

  • 1 ½ cups guacamole

INSTRUCTIONS



Preparing the Toppings

  • Shred lettuce, dice tomatoes and white onion, place on serving platter

  • Gather sour cream, salsa, guacamole and shredded cheese

  • Arrange all toppings with serving tongs or spoons


Cooking the Beef

  • Heat oil in cast iron skillet over medium-high heat

  • Cook diced onion 3–4 minutes until softened, add garlic for 1 minute

  • Add ground beef, break apart and cook until fully browned, 7–9 minutes

  • Drain excess fat, add all seasoning and stir to coat evenly

  • Add ¾ cup water, simmer on medium-low 3–4 minutes until absorbed

  • Taste and adjust seasoning, keep warm on low heat


Warming the Tortillas

  • Heat dry skillet over medium-high, warm each tortilla 30 seconds per side

  • Stack and keep covered with a clean towel to stay warm

  • Place at the start of the taco bar line


Assembling the Tacos

  • Each person selects a warm tortilla, spoons beef from the skillet

  • Move down the taco bar adding preferred toppings

Serve: Keep the skillet on low heat throughout serving so the beef stays hot for everyone.
