Bean Soup
Bean Soup

Bean soup is a easy hearty and nutritious dish made with a variety of beans, accompanied by vegetables and seasoned with herbs and spices. It's a comforting and filling meal, perfect for warming up on a chilly day.

INGREDIENTS


  • 1 onion – chopped

  • 1 green bell pepper – chopped

  • 1 tsp garlic – minced

  • 2½ cups vegetable broth

  • 1 (15 oz) can stewed tomatoes

  • 1 (15 oz) can garbanzo beans – do not drain

  • 1 (15 oz) can red beans – do not drain

  • 1 (15 oz) can whole kernel corn – do not drain

  • 1 (15 oz) can vegetarian refried beans

  • ½ tsp cumin powder

INSTRUCTIONS


Prep ingredients: Chop the onion and green pepper. Mince the garlic (if not pre-minced).

Combine and cook: Add all ingredients to a large pot or 12-inch Dutch oven. Stir to mix. Cook over medium heat for about 30 minutes, or until the onions and peppers are tender. Stirring occasionally.


Dutch Oven Cooking Tips

  • Use 16 coals arranged around the edge of the lid

  • Use 8 coals in a checkerboard pattern under the bottom

  • Rotate lid and oven occasionally for even heat
