Warm, buttery, golden garlic bread made on a French baguette or Italian loaf — a simple and satisfying side that pairs well with pasta dishes, soups, and salads. Ready in minutes on the griddle or grill with minimal cleanup.

INGREDIENTS

  • 2 French baguettes or 1 large Italian loaf

  • 8 tablespoons (1 stick) butter, softened to room temperature

  • 4 cloves garlic, finely minced

  • 2 tablespoons fresh parsley, finely chopped (or 1 tablespoon dried parsley)

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Optional:

  • Shredded Parmesan cheese

  • Red pepper flakes

INSTRUCTIONS


Preparing the Garlic Butter

  • Soften the Butter: Allow butter to sit at room temperature until soft enough to spread easily. If short on time, cut butter into small pieces to speed up softening.

  • Mince the Garlic: Peel and finely mince the garlic cloves. The finer the mince the better — large chunks of garlic can burn on the heat.

  • Mix: In a small bowl combine the softened butter, minced garlic, parsley, salt, and pepper. Stir well until fully combined into a smooth, even garlic butter spread.

Preparing the Bread

  • Slice the Baguette: Cut each baguette in half lengthwise, creating two long flat halves per baguette. For an Italian loaf, slice lengthwise down the center the same way.

  • Spread the Garlic Butter: Spread the garlic butter generously and evenly across the cut surface of each bread half, making sure to reach all the way to the edges.

  • Optional Topping: Sprinkle shredded Parmesan and/or red pepper flakes over the buttered surface if desired.

Cooking the Garlic Bread

On the Griddle or Camp Stove

  • Heat the Griddle: Place the griddle or a large cast iron skillet over medium heat. No oil is needed.

  • Cook Butter Side Down: Place the bread halves butter side down on the hot griddle. Press down lightly with a spatula to ensure even contact with the surface.

  • Cook: Toast for 3–5 minutes until the butter is melted, the surface is golden brown, and the edges are crispy. Watch carefully as garlic butter can burn quickly on high heat.

  • Remove and Slice: Transfer to a cutting board. Slice each half crosswise into individual serving pieces roughly 2 inches wide. Serve immediately.

On the Grill

  • Preheat the Grill: Heat the grill to medium heat — approximately 350°F. High heat will burn the garlic butter before the bread toasts.

  • Place Butter Side Down: Lay bread halves butter side down directly on the grill grates.

  • Cook: Grill for 3–5 minutes until golden and toasted with light grill marks. Keep the lid open and watch closely to avoid burning.

  • Remove and Slice: Transfer to a cutting board and slice into individual serving pieces roughly 2 inches wide. Serve immediately.

Serve: Serve hot immediately after slicing. Garlic bread is best fresh off the heat — it softens quickly as it cools. For a self-serve option, place sliced pieces on a serving platter or tray on the camp table.
