A fresh, simple, and elegant no-cook vegetarian wrap inspired by the classic Italian Caprese salad. Creamy fresh mozzarella, juicy ripe tomatoes, and fragrant basil are drizzled with olive oil and balsamic glaze, then wrapped in a soft flour tortilla. Light, refreshing, and ready in minutes.
INGREDIENTS
8 large flour tortillas (lard-free)
16 oz fresh mozzarella, sliced into ¼-inch rounds
4 medium ripe tomatoes, sliced into ¼-inch rounds
2 cups fresh basil leaves
4 tablespoons olive oil
4 tablespoons balsamic glaze
½ teaspoon salt
½ teaspoon black pepper
INSTRUCTIONS
Preparing the Ingredients
Slice mozzarella into ¼-inch rounds and pat dry
Slice tomatoes into ¼-inch rounds, removing stem end
Leave basil leaves whole or roughly tear larger leaves
Arrange mozzarella, tomatoes, and basil together on a serving platter
Set out olive oil and balsamic glaze in small bowls or squeeze bottles
Leave tortillas in their bag at the start of the serving line
Set out salt and pepper for seasoning
Assembling the Wraps
Lay tortilla flat and layer mozzarella, tomato, and basil down the center
Drizzle with olive oil and balsamic glaze, season with salt and pepper
Fold sides in, roll from the bottom up tucking firmly as you go
Serve: Serve immediately after rolling for best texture. Fresh mozzarella and tomatoes release moisture over time so wraps are best assembled and eaten straight away.
