Frittata

This classic Italian baked egg dish is a great way to make breakfast for a crowd. With a selection of fillings: cheddar cheese, scallions, tomatoes and spinach with chosen protein: ham, bacon or sausage. Served with salsa.

INGREDIENTS

  • 6 eggs (scrambled)

  • 3½ oz ham, bacon or sausage, julienned

  • ½ cup milk or 1½ cups half and half

  • 1 teaspoon sea salt

  • ¼ teaspoon freshly ground pepper

  • 1 tablespoon olive oil (optional)

  • ¼ cup of scallions, chopped

  • ½ cup cherry tomatoes, halved

  • ½ cup chopped spinach

  • ½ cup shredded cheese

INSTRUCTIONS

  1. Chop spinach and scallions. Halve tomatoes. Julienne meat.

  2. In a medium bowl, beat together the eggs, then add milk, cheese, chopped spinach, scallions, tomatoes, olive oil, salt, and pepper and mix until thoroughly blended.

  3. Add meat to the silicone mold inside the Omnia. Pour egg mixture. Cover and cook over medium  to low heat for about 20-30 minutes.

  4. The eggs will appear fully cooked on top and the frittata will begin to puff up when finished.

Serve from inside Omnia.
