How to Identify
Wild Rhubarb is one of the more visually distinctive plants in the Arizona desert landscape — large, lush, and unmistakably out of place in the dry washes and sandy flats where it grows. When everything around it is brown and dormant in late winter, Wild Rhubarb is pushing up thick reddish-green stalks and broad leaves from the sandy soil — a reliable early spring beacon for foragers who know what to look for.
Size and Form: A robust perennial herb growing from a cluster of large fleshy roots. Mature plants reach 1 to 3 feet in height with a spread of 2 to 4 feet. The overall impression is of a lush, healthy plant that seems to belong in a wetter climate than the desert wash where you find it.
Stalks: Thick, fleshy, and reddish-green to deep red — similar in appearance to cultivated rhubarb stalks. The stalks are the most recognizable feature and the primary food part. Young stalks in late winter and early spring are the most tender and best for eating — they become tougher and more fibrous as the season progresses.
Leaves: Large, broad, and wavy-edged — 4 to 12 inches long, lance-shaped to oval, with a leathery texture and prominent midrib. Leaves are dark green on the upper surface and lighter beneath. The base of each leaf wraps partially around the stem at the node — a characteristic of the dock family. Young leaves are edible when cooked. Mature leaves become increasingly high in oxalic acid and should not be consumed in quantity.
Flowers: Small, greenish-white to pinkish, produced in dense elongated clusters at the top of the plant in spring. Not particularly showy but distinctive in their dense arrangement. The flower stalks can reach 3 to 4 feet tall in vigorous plants.
Seed heads: After flowering the plant produces distinctive winged seed cases — three papery wings surrounding each seed, turning reddish-brown to rust-colored as they mature. The seed heads are one of the most reliable identification features — the winged seeds are characteristic of the entire Rumex genus and unlike anything else in the desert landscape.
Roots: Large, fleshy, carrot-shaped to irregular, reddish-brown on the outside and yellow-orange inside — the yellow-orange interior color from tannin compounds is a reliable identification feature. A mature plant may have a cluster of 6 to 12 large roots extending 12 to 18 inches into the soil. The roots smell faintly earthy and astringent when cut.
Habitat: Sandy washes, desert grasslands, moist flats, roadsides, and disturbed areas. Often found near seasonal water sources — the banks of dry washes where moisture persists underground longest into the dry season. Sycamore Creek on AZ-87 is a classic habitat — sandy banks along a seasonal stream in the lower Sonoran Desert. Also found in higher elevation grasslands and disturbed areas well into the transition zones.
Look-alike note: Other Rumex species grow in Arizona — particularly Rumex crispus (Curly Dock) which is also edible and medicinal. The large fleshy reddish stalks, broad leaves, and massive root cluster of Rumex hymenosepalus distinguish it from the smaller, more slender Curly Dock. Both are edible and in the same family — but Wild Rhubarb is significantly larger and more robust. Cultivated rhubarb (Rheum rhabarbarum) looks similar but is only found in gardens.

Habitat: Sandy washes, desert flats, moist disturbed ground, roadsides, and grassland edges from the lower Sonoran Desert through the high desert transition zones. Almost always associated with sandy or loamy soils that retain some moisture — rarely found in rocky or clay soils.
Elevation: Sea level to approximately 7,000 feet — most abundant in the Sonoran Desert and desert grassland zones between 1,000 and 5,000 feet.
Range in Arizona: Widespread across central and southern Arizona — common along the Verde River corridor, the AZ-87 corridor at Sycamore Creek, the Apache Trail drainage, desert washes throughout Maricopa, Pinal, Pima, and Yavapai counties, and extending into the grassland zones of southeastern Arizona.
Also found: California, Nevada, Utah, New Mexico, Texas, and northern Mexico.
When to Gather:
Stalks: January through April — best in late winter and early spring when stalks are young, tender, and before the plant flowers. Harvest before the stalks become tough and fibrous.
Young leaves: February through April — harvest only young leaves before full maturity. Cook before eating — do not eat raw in quantity.
Seeds: May through June — harvest dry winged seed cases when fully ripe and brown.
Roots: Fall through early spring — best harvested when the plant is dormant or just emerging. Avoid harvesting roots in summer when the plant is stressed.

Worth watching for in virtually any moist, sandy, or disturbed soil habitat from desert to subalpine.
How to Gather
Stalks:
Select young stalks that are tender and firm — avoid stalks that have begun to flower or show signs of toughening
Snap or cut stalks at the base — they break cleanly when young
Remove leaves before transport — the leaves wilt quickly and are not the primary harvest target
Use immediately or store refrigerated for up to one week wrapped in a damp cloth
Do not harvest all stalks from one plant — leave enough for the plant to continue growing and reproduce
Young Leaves:
Harvest only the youngest, smallest leaves from the center of the plant
Avoid mature leaves — oxalic acid content increases significantly with age
Always cook before eating — boiling in two changes of water reduces oxalic acid content
Use as you would cooked spinach or chard
Seeds:

Edible Uses
Wild Rhubarb stalks have a tart, acidic flavor similar to cultivated rhubarb — the result of oxalic acid content that gives both plants their characteristic sourness. Young stalks in late winter and early spring are the most tender and best flavored. The tartness mellows with cooking making Wild Rhubarb excellent paired with sweet fruits — prickly pear juice, honey, or wild strawberries. Used in pies, jams, chutneys, and sauces anywhere cultivated rhubarb is called for.
Raw stalks can be eaten in small quantities as a trail snack — the tartness is refreshing but do not consume large quantities raw due to oxalic acid content.
Young leaves cooked in two changes of water are mild and spinach-like — use in soups, stews, or as a cooked green. Never eat mature leaves raw or in quantity.
Winnowed and ground dry seeds produce a coarse mildly flavored flour used in bread, flatbread, and porridge. Seeds can also be used whole in soups and stews as a thickener.
Medicinal Uses
Wild Rhubarb root is the primary medicinal part — containing significant concentrations of tannins, anthraquinones, and other bioactive compounds that give it powerful astringent, antimicrobial, and digestive properties.
Astringent / Wound Care: The high tannin content makes Wild Rhubarb root one of the most effective topical astringents available from wild Arizona plants. A strong decoction of the root applied to wounds, sores, and skin infections tightens tissue, reduces inflammation, and creates an inhospitable environment for bacterial growth. Used across multiple Native traditions as a standard wound care remedy.
Sore Throat and Mouth: Gargle with a strong root decoction for sore throats, mouth sores, and gum inflammation. The tannins coat the mucous membranes and reduce inflammation.
Digestive: Anthraquinone compounds in the root act as a mild laxative in moderate doses. The same compounds in larger doses become strongly purgative — use with caution and in small quantities. Traditional use as a digestive regulator — mild doses stimulate digestion without strong laxative effect.
Skin Conditions: Root decoction or poultice applied to eczema, psoriasis, and other inflammatory skin conditions — the astringent and anti-inflammatory properties reduce redness and irritation.
Root Decoction — basic preparation:
Simmer 1 tablespoon chopped fresh root or 1 teaspoon dried powdered root in 2 cups water for 20 minutes. Strain and cool. Use topically as a wash or gargle. For internal use start with small quantities — 1 to 2 tablespoons — and assess response before increasing.
Native American Uses
Wild Rhubarb was one of the most economically and medicinally significant plants across the Native peoples of the Southwest and California — used extensively for food, medicine, and most remarkably as a commercial tanning agent.
Navajo: Young stalks eaten as a spring vegetable. Root used medicinally as an astringent and wound treatment. The Navajo name Tł'ohchínígíí reflects its status as a recognized and named plant in the traditional botanical knowledge system.
O'odham: Stalks eaten fresh and cooked as a spring green. Root decoction used for sore throats and mouth sores.
Apache: Young stalks used as a spring food — one of the first fresh plant foods available after winter. Root used medicinally for digestive complaints and skin conditions.
Cahuilla and California peoples: Extensively used as both food and medicine — stalks roasted and eaten, roots boiled for medicinal use.
Tanning Industry: The most commercially significant use of Wild Rhubarb historically was as a source of tannin for leather tanning — hence the common name Tanner's Dock. The roots contain 25 to 35% tannin by dry weight — a concentration comparable to commercial tanning agents. In the late 1800s and early 1900s Wild Rhubarb roots were commercially harvested across the Southwest and sold to tanneries. The plant was so commercially valuable that proposals were made to cultivate it as a tanning crop. The development of synthetic tanning agents ended the commercial harvest but the roots remain one of the highest natural tannin sources in North America.
How to Prepare | Recipes
Wild Rhubarb Sauce
Harvest young stalks — remove all leaves
Chop into 1-inch pieces — approximately 2 cups
Combine with 1/4 cup water and 1/4 cup honey or sugar in a saucepan
Simmer over medium heat 10 to 15 minutes until stalks are completely soft
Mash or blend to desired consistency
Use over pancakes, oatmeal, ice cream, or as a condiment
Add prickly pear juice for color and complementary flavor
Cooked Young Leaves
Harvest only the youngest leaves from the center of the plant
Rinse thoroughly
Bring a pot of water to a boil — add leaves and cook 5 minutes
Drain and discard cooking water — this removes a significant portion of oxalic acid
Return leaves to pot with fresh water and cook another 5 minutes
Drain again and season with salt, olive oil, or butter
Use as you would cooked spinach or chard
Seed Flour
Harvest dry reddish-brown seed heads
Strip seeds into a paper bag
Winnow to separate seeds from chaff — pour between containers in a light breeze
Grind in a grain mill or mortar and pestle to a coarse flour
Mix with other flours at a ratio of 1 part seed flour to 3 parts wheat or corn flour

Oxalic Acid: Wild Rhubarb stalks and leaves contain oxalic acid — the same compound present in cultivated rhubarb, spinach, and many other edible plants. In moderate quantities oxalic acid is harmless for most people. In large quantities it can contribute to kidney stone formation in susceptible individuals and interfere with calcium absorption. Cooking reduces oxalic acid content significantly — always cook leaves before eating and avoid consuming large quantities of raw stalks regularly.
Leaves — cook before eating: Never eat mature Wild Rhubarb leaves raw in quantity. The oxalic acid concentration in mature leaves is high enough to cause digestive distress and potentially more serious effects in large quantities. Young leaves cooked in two changes of water are safe in moderate quantities.
Root — use with caution: The anthraquinone compounds in the root are medicinal in small doses and strongly purgative in large doses. Do not self-prescribe the root for internal use without understanding the dose-response relationship. Start with very small quantities and assess response.
Kidney conditions: Individuals with kidney disease or a history of kidney stones should avoid consuming Wild Rhubarb in quantity due to oxalic acid content.
Pregnancy: Avoid medicinal use of the root during pregnancy — anthraquinone compounds may stimulate uterine contractions.
